We don't write the menu first and go looking for produce to fit it. It works the other way around — what's good this week decides what's on the plate.

Fire
Most of what leaves the kitchen has touched an open flame at some point. It's slower and less forgiving than a induction plate, and that's exactly the point.

Time
Nothing is rushed onto the pass. A dish is ready when it's ready, not when the ticket says so.

People
The same hands that prep in the afternoon are plating at ten at night. No one here is a concept — everyone is in the room.

Amsterdam at night
NOIR only really exists after dark — the city outside gets quieter, the room inside gets warmer, and dinner stops being an errand.
